At last I share the promised recipes. The boiled Raisin Cake may not sound inviting, but trust me, it’s the perfect tea cake: tasty and filling with a nice cup of tea. The salad is a slightly sweet, yummy dish, perfect for potlucks and holidays parties. I find that sides are always lacking as most people bring main dishes or dessert.
Boiled Raisin Cake
2 c sugar
1 pkg raisins
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
2 c cold water
1 c lard
Combine all ingredients in a saucepan and bring to a boil. Boil for 5 minutes. Do not boil over.
Allow to cool and add:
3 c flour
1 tsp baking powder
Can add 1c nutmeats
Pour mixture into two bread pans.
Bake at 350 for about an hour.
Broccoli & Cauliflower Salad
2 c mayonnaise
½ c sugar
1/3 c grated parmesan cheese
2 tbs vinegar
Small onion chopped
3/4c golden raisins
1 med sweet red onion chopped
Bunch of cauliflower and broccoli
1 lb bacon cooked crisp
1 c shredded cheddar
2/3 c slivered almond
Mix sugar, vinegar, parm cheese, onion and raisins. Let stand in fridge overnight.
Toss red onion, broccoli, cauliflower, and bacon in a bowl. Por mayo mixture over and toss lightly. Stir in cheese and nuts.
