I hadn't canned in years but it comes back to you pretty quickly. I made 7 quarts and this time I added lemon juice (for preservation), salt and sugar (to cut the acid). This year we are also going to can venison. It doesn't sound very appetizing to me but I am told that canned venison is excellent.
I love my new canning kettle. It has a nifty rack that enables you to lift all of the bottles out of the water bath at once. Not long after I set the bottles on the counter to cool, I could hear the tops pop as the vacuum developed. Success!
